My friends from my old job threw me and another bride-to-be a wedding shower last night, and it was so much fun. I can’t even believe it’s August and there are only six weeks until the wedding. Six. Weeks. Does time always go this fast, or is it just when you’re wedding planning? Because I am most certainly not prepared for the rest of our life to just disappear like these last few months have.
During the month of July, we continued to talk about quick weekday meals. There were two Mexican-inspired, healthy dishes — slow cooker chicken taco chili and a rice and bean casserole. Speaking of casseroles, I also told you guys about this delicious southern chicken casserole with a secret ingredient that takes it from bland to bam, and we made the easiest, most delicious baked ravioli. Jacob also talked to you guys about marinades for red meat. (And I know for a fact the next post in that series is coming by the end of this week!)
At the beginning of this month, I said my only goals were to cook and write more. I am happy to report that I’ve done that this month, although I still miss cooking and posting as much as I was, so I think that will probably be my goal for August too.
